Ingredients
  

  • 2 pounds boneless skinless chicken thighs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 medium onion thinly sliced
  • 3 cloves garlic minced
  • 8 ounces mushrooms sliced
  • 2 medium apples sliced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh thyme leaves

Method
 

  1. Preheat oven to 375°F and grease a 9x13-inch baking dish.
  2. Season chicken with salt and pepper, then sear in olive oil for 3–4 minutes per side until golden. Transfer to baking dish.
  3. In the same skillet, sauté onion in butter for 3–4 minutes. Add garlic and mushrooms and cook until softened.
  4. Add chicken broth, then stir in cream, Dijon mustard, and thyme. Simmer for 3–4 minutes until slightly thickened.
  5. Arrange apple slices over chicken and pour sauce evenly on top.
  6. Bake uncovered for 30–35 minutes until chicken reaches 165°F and sauce bubbles.
  7. Rest 5–10 minutes before serving.
